Pancakes Stack

Today is Shrove Tuesday or Pancake Day so thought I would share this recipe which makes lovely light thin pancakes in no time at all. This is a basic traditional recipe – the no frills version from www.allrecipes.co.uk.

Ingredients

250g plain flour
1/4 tsp salt
2 large eggs
500ml milk
Knob of butter for frying

Choice of Toppings: Caster Sugar, Lemon, Maple Syrup, Golden Syrup, Whipped Cream etc

Traditional Pancakes Ingredients

Method

1. Sift the flour and salt into a mixing bowl (Remember I never sift and they were fine!)

2. Break the eggs into a bowl and then add to flour

3. Pour in half of the milk and whisk briskly – using an electric handheld beater or food processor makes this step easier

4. Add the remaining milk and whisk until the batter is smooth

Pancakes Mixture being mixed

5. Heat an small pan over a low heat. Add a small knob of butter and swirl the pan to coat the bottom

6. Use a ladle to spoon the pancake batter into the pan, then tilt the pan to spread the mixture out evenly

7. As it sets, shake the pan to see if the pancake is loose, then flip it over with a palette knife. Cook the other side for 30 seconds -then shake again to see if it’s loose

Pancakes Step by Step

8. Slide onto a warm plate, sprinkle over some sugar and a squeeze of lemon juice – then eat immediately!

9. Cook the rest of the pancakes, one at a time but remember to melt a small knob of butter before adding the batter

I love you, Anna! finally someone “famous” showed the moms the REAL pancakes making. One of the most favourite meals in my house, even my extreme picky eater says that mommy’s pancakes are super yummy. BTW do you know you can make them with egg substitute (this powder kind) and it works as well? And also, that they are even more delicate ad yummy made with the sour creme (or canned one) instead of milk? running to make them now!

Quick and easy method if you have a ninja type blender with the various size cups.
Add the milk to the beaker cup, then the two eggs, salt and flour on top. Screw on base and blend until mixed thoughly. Take off base and attach pouring lid. Then you can pour straight out of breaker into pan

Yum…I made these this morning for breakfast…it turned a potential difficult morning into a delight. Our daughter is not a big fan of eating and thinks it more of a chore, but when she had the first pancake she really enjoyed it and then asked for more! Maybe we will have pancakes more often….?

How wonderful Heather! Thank you so much for letting me know she enjoyed them. They are quite quick which is nice too during a busy morning 🙂 I definitely think you can make them more often – my little ones were helping me out this morning measuring and flipping so that was nice too 🙂
