Ingredients

  • 3 Tablespoons Plain White Flour
  • 3 Tablespoons Sugar
  • 1½ Tablespoons Cocoa Powder
  • ½ teaspoon Baking Powder
  • 3 Tablespoons Milk
  • 2½ Tablespoons Oil (or melted butter)
  • ¼ teaspoon Vanilla Essence
  • Pinch of salt
  • 1½ Tablespoons Brown Sugar
  • 1 teaspoon Cocoa Powder
  • 3 Tablespoons Boiling Water

Instructions

  1. Boil water in the kettle. Grease an oversized microwave-safe mug or dessert bowl and set aside.
  2. In a small bowl, mix the flour, sugar, first measure of cocoa powder, and baking powder until combined.
  3. Add the milk, oil, and vanilla essence, stirring until smooth.
  4. Scrape all the batter into the prepared oversized mug or bowl, leaving space for it to rise during cooking.
  5. Sprinkle the brown sugar and second measure of cocoa powder over the top.
  6. Carefully pour the hot water over the back of a spoon into the mug.
  7. Microwave for 80 seconds, or until the cake rises and bounces back when touched. Microwaves vary, so adjust if needed. Remove carefully as it will be hot.
  8. Serve warm with ice cream, cream, custard, or a dessert sauce.
  9. Enjoy!
