A decadent treat that is just for the grown ups, combining my popular Tim Tam Truffles with a lovely shot of Baileys these are sure to be a hit!
If you are looking for a sweet treat for a special occasion or as a gift, then these could be the one. Using the delicious flavours of Baileys or Irish Cream Liqueur I have combined forces with my lovely Tim Tam Truffles.
These are an adult only recipe as Baileys contains alcohol and since these are not baked it does not burn off, so please ensure your guests are aware of that!
Tim Tams are two biscuits with a cream centre coated in chocolate, there are many variations across the world of something similar, but any chocolate coated biscuit will do.
I have included a few different varieties of the biscuit to get the different colour as it looks so effective, but feel free to just use one. Each recipe uses approximately two packages of biscuits.

Various Coatings, such as Coconut, Cocoa, Hazelnuts, Icing Sugar or Sprinkles
The method is super simple, the longest part is the rolling as always, but these are well worth the time. If you wish, make several batches at once so you can set up a rolling station and work your way through them.
First step is to crush the Tim Tams, each packet contains varying amounts of biscuits, but each biscuit weighs around 18 grams, so for this recipe you will need around 18 Tim Tams, regardless of flavour. Which may leave a biscuit or 2 for snacking on later.
I use my food processor to blitz the biscuits, you can do it with a plastic bag and a rolling pin but with the cream centre a food processor or a blender will make preparing these much easier.
Then add to this the Baileys, I have used a quarter cup, you can use less if you prefer but I think this gives it such a lovely flavour. Then you add the condensed milk, 2 Tablespoons is usually the best amount, depending on the biscuit you may need up to 3.
You want the consistency to not be too wet, so once it clumps into a soft ball it is ready. Then chill the mixture for 10 minutes while you prepare for rolling the balls.
Set yourself up with the toppings in small bowls with a teaspoon, a bowl with a little water for your hands, a tablespoon and a plate to put the rolled balls on.
Once the biscuit mixture has set quite firm, take level tablespoon amounts and with a damp hand roll into balls, then place in the topping, I like to use a teaspoon to gently lift and turn the ball in the topping until well coated. Then place the coated ball on the plate and repeat.
Today I have coated the white Tim Tam balls in finely desiccated coconut, the dark balls in chocolate hail and the milk chocolate ones in cocoa. But you could also use icing sugar, finely diced toasted hazelnuts or almonds, melted chocolate, sprinkles or leave them plain.

Baileys Tim Tam Truffles
Delicious chocolate truffles with an irish cream liqueur mixed throughout - a treat just for the grown ups
Ingredients
- 340 grams Chocolate Tim Tams Biscuits, approx 18
- 1/4 Cup Baileys Irish Cream Liqueur, 60 mls
- 2-3 Tablespoons Sweetened Condensed Milk
Toppings Suggestions, approx 1/3 Cup
- Finely Desiccated Coconut
- Finely Diced Toasted Nuts
- Icing Sugar
- Chocolate Sprinkles
- Dutch Cocoa
- Melted Chocolate*
Instructions
- In a food processor or blender blitz the Tim Tams until they form a fine crumb
- Pour in the Baileys and pulse to combine
- Add in 2 tablespoons of sweetened condensed milk, this should be enough to bind the biscuits into a soft ball of mixture
- If it is still a little dry add a teaspoon at a time until you are happy with the consistency.
- Place the mixture into a small bowl and into the refriterator for 10 minutes to firm up while you prepare a rolling station
- Set up a bowl of water for your hands, a small bowl or bowls of the desired coatings, a plate for the finished balls, a tablespoon measure and a teaspoon.
- Once the mixture feels firm to the touch but not hard, take a level tablespoon of the mixture and with a lightly damp hand roll into a round ball, having the ball a little damp helps the coating stick.
- Add the ball to the small bowl of coating, toss to coat, I use a teaspoon to gently lift and turn the ball, until well coated
- Gently lift this out of the coating and place on a plate and repeat with the remaining mixture.
- Refrigerate for at least 3 hours to set, once hard and cold store in an airtight container in the refrigerator for up to 5 days, or these freeze really well.

Notes
*Coating in Melted Chocolate
Roll the balls as above, but refrigerate them for an hour before the next step. Set up a piece of baking paper on a tray and set it aside. Take 150 grams of chocolate, and gently melt it a small bowl in the microwave until just melted, in 15-20 second increments. Add a half a teaspoon of vegetable oil and stir well.
Place a cold ball into the mixture and using a fork turn to coat, lift the ball out on the prongs of the fork and allow the chocolate to drain off it, then carefully place on the prepared tray. Set in the refrigerator for 3-4 hours before adding to an airtight container as above.
Do these contain alcohol?
Yes, Baileys contains alcohol, therefore this is not suitable for children or those unable to tolerate alcohol. If you wish to make these without Baileys please use my original recipe
