Sometimes you feel like a little something after dinner but cannot be bothered baking or the supermarket seems too far away why not try this individual self saucing chocolate pudding!
I almost feel bad about sharing this recipe with you. It could be dangerous knowing that in under 5 minutes you can have a decadent saucy dessert, perfect for those late night cravings, simply mix together the ingredients, sprinkle over the sauce components and bake for 1 and a half minutes, way too easy!
I have tried mug cakes in the past and have been really disappointed with both the flavour and texture. They often turn out spongy and weird so it’s not really been worth the hype. But this recipe exceeds all of those by a million miles. Self Saucing puddings are lovely in the microwave as they come out moist and delicious, this one packs a punch in flavour and texture.
The best tip I have for you is to use a large mug or even a bowl rather than a small coffee mug as it does rise in the microwave quite a bit as it cooks – luckily for you I tested this thoroughly and only my biggest bowl like mug passed the test – I sadly lost a few in the process! Also it is really hard to make this dessert look good in a photograph! But you have to trust me, it may not look pretty but it definitely tastes good!
It truly only takes 1 and a half minutes to cook, all microwaves are different but it was fine in mine and it is quite a powerful one, you will know it is done when the cake part is cooked through not stodgy.

I plan on testing a few other variation of mug cakes as I think this winter when I am flat out busy these little mug cakes could be great to split between the kids – and not split one for me!

The Best Chocolate Self-Saucing Mug Cake Ever
Delicious chocolatey saucy dessert for ONE is just moments away. Be sure to use an oversized mug or dessert bowl as it does rise and can spill over!
Ingredients
- 3 Tablespoons Plain White Flour
- 3 Tablespoons Sugar
- 1 1/2 Tablespoons Cocoa Powder
- 1/2 teaspoon Baking Powder
- 3 Tablespoons Milk
- 2 1/2 Tablespoons Oil (or melted butter)
- 1/4 teaspoon Vanilla Essence
- 1 1/2 Tablespoons Brown Sugar
- 1 teaspoon Cocoa Powder
- 3 Tablespoons Hot Water
Instructions
- In a small bowl add the flour, sugar, 1st measure of cocoa powder and baking powder and stir well.
- Add to this the milk, oil and vanilla essence and and mix until fully combined
- Pour into a microwave proof oversized mug or dessert bowl (it will rise during baking)
- Sprinkle over the brown sugar and second measure of cocoa powder
- Carefully pour over the hot water
- Cook in the microwave for 1 and a 1/2 minutes, remove carefully once cooked
- Serve warm with ice cream, cream, custard or a delicious dessert sauce!
Notes
Use an oversized mug or dessert bowl as it will rise and could overflow during cooking

Delicious! The recipe is perfect as it is, but I couldn’t help tinkering. I slightly decreased the oil and sugar in the batter (2 Tbs oil and 2 Tbs sugar), and since I used oil rather than butter I added 1/8 tsp salt. As well as the vanilla I added 1 Tbs dark rum and a small handful of raisins. So yummy. 😋 Next time I might try to increase the amount of sauce – maybe 2 Tbs (or 2 1/2 Tbs?) brown sugar, 1 1/2 tsp cocoa and 4 Tbs hot water. Thanks for a great (and very forgiving) recipe!

I think the sugar content is far too high, but we are a lower sugar family so maybe that’s my take on it. I reduced the sugar in the batter to 1 T and 1/2 T sugar for the sauce. My daughter has just made one now and I reduced the sugar in the batter to 1/2 T and I think that is sufficient. She also subbed the oil with an egg, which works well, too.
It is a great recipe and we use it as a quick dessert for my family of 9 – we get a good production line going with all the mugs!

Lovely recipe, put in deep breakfast bowl just checked it every 30 secs. Took about 3.5 mins for me but i maybe put more ingredients in. Also added more milk to make it more runny and added chopped up chocolate to the mix. Fabulous gooey chocolate pudding with icecream

I was craving chocolate sooo badly when I came across your recipe. I just made it and inhaled it. It was delicious. I am not fond of dark chocolate so I used somoe instant hot chocolate powder instead of cocoa. It was fantastic! I also used 2 Tblsps of sugar instead of 3. Sounds delicious. Using hot chocolate and reducing the sugar may have had a impact on the amount of liquid as normally it is fine. But I am so glad you enjoyed it!

This hits all the spots. I actually wanted nigella’s choclate and pear pudding but it takes too long to make, and i dont eat eggs anymore.
so i added two tinned pear slices and some almond flour to soak up any pear juice. so saucey. i can think again because my cravings are satisfied. This is wonderful. I also did 2 minutes in microwave.

Just had a go at this pud in a mug, absolutely gorgeous was a bit weary of putting the oil in as have made them before with oil in and they weren’t very pleasant. Definitely a 10/10 next time though will put a little less sugar on the top, thank you for such a quick yummy recipe ??

Just finished eating..it was awesome..i don’t have a microwave so i attempted this on a gas stove. Boiled some water in a saucepan, placed a plate and then my bowl on it. Covered and steamed on low heat for about 14 mins..came out yum..guess i would try covering it wid a foil next time cause there was some wetness on the top of the pudding but taste was too good. Loved it.

Great recipe! Right size for a single (sensible, lol) large serving. Comes out just like what my first boyfriend’s mom used to make for us kids many many years ago… except … I used 1/3 less sugar and coffee instead of hot water with yours, to get mocha.

I’ve made a lot of chocolate puddings in a cup. Most recipes are just undercooked chocolate cake, and turn out stodgy or fudgy and dense and way too sweet. In a regular oven made self saucing pudding you sprinkle sugar and cocoa and pour hot water on top of the batter and it creates a sauce. No recipe I’ve used for a mug made pudding does this, but finally this one does!! And it made the most beautiful pudding! Airy and spongey, not dense, and sweetness was just right. My new go to recipe!

Thank you I loved this recipe. A delicious saucy pudding. I made it for the kids, I substituted half of the first lot of sugar with Erythritol to reduce the sugar. We have self raising flour in Australia so no need for baking powder which sometimes people can taste. I also made a sugar free one for myself; substituting all sugar for erythritol and I substituted half the flour with almond meal. I had to cook mine for an extra 90 seconds and it bubbled up a lot more but turned out great.

Hi, oh dear that’s very strange? Did you just use 3 tablespoons of flour? 15ml tablespoons is what we use. Shouldn’t need those extras.

I loved it and it was so easy to make! I had no oil or butter, so I added a little extra milk. I cooked it for an extra 30 seconds as well. Next time I’m going to add some instant coffee and make a mocha pudding. After that, I’m going to try adding some cardamom. Thanks heaps for the recipe xx

Great recipe. Thank you so much. I agree that most I’ve tried are very disappointing but this is one is fab! I halved the quantity of sugar for the batter, and used cream with a drop of water instead of butter/oil. I also used half almond flour and half white flour. The almond flour gives a bit more heft and is a bit healthier. (I think it would actually work well with purely almond or coconut flour for those wanting a gluten free option).
