Lolly Cake is a Kiwi classic, I have given it the ultimate Kiwi treatment by using Girl Guide biscuits in it as well! Truly divine.
This is a classic version of the much loved lolly cake. Lolly cake is a no bake slice with crushed biscuits, condensed milk and of course the lollies!
The sweets used in this recipe are easily found in NZ using fruit puffs or Explorers but harder to come by in other countries. They are firmer than a marshmallow but still a soft bite.
The biscuits you use an be anything from malt biscuits, rich tea, arrowroot, Marie, vanilla wine or super wine. A simple biscuit that you can pulse into a crumb.
I made this one using girl guide biscuits, the classic plain variety which are getting harder to come by but are a much loved Kiwi icon.
Lolly Cake was becoming more popular in tea rooms and supermarkets in the early 40’s and are a hit for kids and adults alike now.
Looks like they were enjoyed originally in at least 1940, and available in stores around 1960. They still now feature in most NZ cafes and bakeries and my kids love them – adults do too!
It is an incredibly simple recipe, using just a few basic ingredients and techniques. The original recipe calls for Malt Biscuits which gives a lovely colour and flavour.
But vanilla biscuits are just as delicious and it is packed with Fruit puffs as you cannot scrimp on those! No bake slices really are so simple to make, take little time to prepare, chill and enjoy!
You can omit the coconut if you like. I also used a loaf tin to assist with the setting of the lolly cake. When soft it can make it hard to hold its shape and a loaf tin is the perfect size.

Lolly Cake - The classic version
A classic Kiwi recipe, Lolly Cake is loved by all.
Ingredients
- 230 gram Packet of Malt Biscuits (or simple vanilla biscuit)
- 120 grams Butter
- 200 grams Condensed Milk (half a can)
- 180 grams Fruit Puffs
- 100 grams Desiccated Coconut to decorate
Instructions
- Set aside a loaf tin or slice tin for setting the Lolly Cake
- Using a Food Processor crush the biscuits to form a fine crumb and set aside in a large bowl
- Slice the Fruit Puffs in half and add to the biscuit crumbs
- On the stove top in a small saucepan, add the butter and condensed milk and gently melt the butter and stir until combined. Do not allow to boil.
- Pour the melted ingredients over the crumbs and fruit puffs and stir to fully combine
- Tip the ingredients onto a piece of baking paper and form into a short log shape similar to that of your loaf tin
- Coat all sides in coconut and then transfer the log on the baking paper into the loaf tin, you may need to reshape once in the tin.
- Allow to set for at least 4 hours
- Slice to serve and store in an airtight container in the refrigerator.
- Enjoy!
