Often we think that some of our favourites meals are tricky and time consuming. I love to share recipes that you can easily recreate at home using simple ingredients and techniques.
These stuffed chicken breasts only contain five main ingredients and a few pantry staples. So simple!
These are such a lovely idea for a special occasion or just any day of the week.
There is some worry around baking chicken breasts and these becoming dry, with this technique of stuffing and wrapping there is no fear of that. I have broken down the steps in my video to show you just how easy this is.
In todays recipe I have used the following ingredients
Chicken Breasts
Streaky Honey Bacon
Feta
Baby Leaf Spinach
Grated Cheese
It is that simple! A little added olive oil, garlic, salt and pepper to enhance the flavour and you will love how easy this one is.
To begin you saute the spinach to wilt this down with the olive oil and garlic, this absorbs the flavour much more than if you were to pop the spinach in whole, and of course reduces the fresh spinach in size by a considerable amount!
Then once this has cooled slightly I crumble the feta into the spinach and add the grated cheese.
Then it is a matter of slicing through the chicken breast, removing any skin if there is some. You want to slice approximately 3/4 of the way through the breast, careful not to cut yourself! I find if I place my left hand on top of the breast and slice carefully about 1 cm below the top of the meat I get a clean cut.
Then stuff the breast with the prepared spinach mix and then wrap the bacon. This can be a little tricky at first, you want to end up with all of the ends of the bacon underneath the chicken breast where possible.
Or you can tuck them in to the bacon strip beside them. You will use 2-3 strips of bacon depending on the size of your chicken breasts.
Then once they are ready to go in the baking dish you bake for around an hour. The bacon will be golden brown and the chicken will be cooked though once you test with a knife. You want the juices to run clear and the chicken to no longer be pink.
This is beautiful served hot from the oven with a lovely fresh salad to cut through the richness of the chicken, serve with a side of roast vegetables or some full flavoured rice and you will have a meal to impress.

Bacon Wrapped Stuffed Chicken
Delicious baked Bacon Wrapped Chicken Breast stuffed with Feta & Spinach, so easy to make!
Ingredients
- 1 Tablespoon Olive Oil
- 2 teaspoons Garlic, minced
- 180 grams Spinach, fresh, baby leaf
- 5 Chicken breasts, large, boneless, skin removed
- 200 grams Feta
- 1 Cup Cheese, I used Tasty, grated
- 1 teaspoon Salt
- 1/2 teaspoon of Pepper
- 250 grams Bacon strips, streaky
Instructions
- Preheat the oven to 175C Bake
- Prepare a baking dish, approx 25 x 30cm, with cooking spray or oil to lightly grease and set aside
- In a frying pan, add the oil and bring to a medium heat
- Add the garlic and heat for one minute until lightly golden
- Add the spinach and gently cook until it has wilted down
- Place the spinach in a medium bowl and set aside to cool for 10 minutes
- While the spinach is cooling prepare the chicken breasts
- You will need a chopping board and a very sharp knife
- Place the chicken breast on the chopping board and lay your hand over the top of the chicken breast
- Slice carefully into the side of the breast approx 1 cm from the top and slice approximately 3/4 of the way through horizontally, do not slice it all the way
- Repeat with the remaining chicken breasts and set aside.
- Once the spinach as almost cooled add the finely crumbled feta, the grated cheese and a pinch of salt and pepper and stir well
- To stuff the chicken - open the sliced chicken breast and take a scoop of mixture and place this in the centre of the breast (be generous with the stuffing as long as the lid almost closes) and close the chicken lid
- To wrap the chicken you will need 2-3 strips of bacon per chicken breast
- Take a piece of bacon and start by placing one end underneath the thickest end of the breast, then carefully wrap the bacon around the chicken, careful not to overlap too much, ending underneath again or tucking the end of the bacon into the strip next to it
- Repeat with the strips of bacon until the chicken breast is covered and all the ends are underneath the chicken.
- Lift the chicken breast covered in bacon and place in the prepared baking dish
- Repeat with the remaining chicken
- Bake for 50-60 minutes or until the bacon is golden and the chicken is fully cooked, test with a knife and the chicken should not longer be pink and the juices should run clear.
- The timing will depend on the size of the chicken breasts
- Remove from the oven and allow to stand for 5 minutes before serving
- Serve with salad, roast vegetables or fragrant coriander rice
- Enjoy!

You could just omit the cheese components if you like – or adding mushrooms would be lovely too.

Looks so yummy , quick question what temperature do you cook in the oven for the hour please?? Was thinking around 170c or less for fan forced?? Thanks in advance recycledmummy.

Hi, the oven temperature is in the recipe above in step one, if you are using fan forced often can you reduce the temperature by 20C. Enjoy

This recipe sounds delicious. Would it be suitable to freeze?

Yes you can. Just freeze wrapped well in plastic wrap and in an airtight container, once the chicken has cooled. You can freeze them up to 3 months and then thaw first, then heat in a 175CF oven for 20-30 minutes until hot inside. Sprinkling water over the top so that the chicken stays moist.
