Delicious and oh so easy! This 4 Ingredient Baileys Chocolate Fudge is so quick to make in the microwave, just 20 minutes prep.
If you are a fan of my 3 Ingredient Microwave Fudge then you will love this adults only version! Again I am back with the boozy treats for a festive spin on these classics.
The method is so simple, just heat, mix and pour into the dish. Then be patient as it chills
The original version and this one is nothing new, there are several variations of this online. I cannot claim it at all!
I have however worked on a few methods to make sure yours is a success. The first part of testing is the type of chocolate, then I played around with the amount of Baileys to use.
This fudge I have photographed is a little softer than I would like but I have since perfected it!
Using all milk chocolate is delicious but it will cause the fudge to be a bit soft, all dark makes it a bit hard, so the combination of the two is perfect.
All dark chocolate is lovely though, so feel free to just make it all dark! It also freezes well, this one below is wrapped in plastic wrap, then in foil.
As much as I would like to add a full half cup of baileys it will also make the fudge just too soft, so a quarter is perfect.
If you wish to try more, reduce the condensed milk further. If it fails you will have made the most amazing ice cream topping ever!

The ingredients you need are:

Butter

Baileys Irish Cream Liqueur
I have included chocolate as ONE ingredient, so don’t comment that technically its 5!
The method is lovely and easy, simply add the milk and dark chocolate, condensed milk and butter to a bowl, and heat gently and briefly until only just combined (see my notes on chocolate seizing – the bane of working with choc!)
Once it has just melted and is silky and smooth, stir through the room temperature Baileys until smooth and all combined, and pour into a prepared tin.
Allow the fudge to set for at least 6 hours or overnight. This fudge is best stored covered in the refrigerator and will remain fresh for up to 4 days.

4 Ingredient Baileys Chocolate Fudge
Delicious microwave Baileys Chocolate Fudge, creamy and smooth, adults only version!
Ingredients
- 275 grams Milk Chocolate, chunks or melts
- 300 grams Dark Chocolate, chunks or melts
- 1 Can Sweetened Condensed Milk, 395 g
- 50 grams Butter, diced
- 1/4 Cup Baileys Irish Cream Liqueur, room temp
Instructions
- Prepare a 20 square slice tin with baking paper, spray a little cooking spray on the tin to help the paper stick, set aside
- In a large microwave proof bowl add the chocolate broken into chunks, the condensed milk and the diced butter
- Microwave for 30 seconds and stir (if your microwave is powerful, heat on 60% power)
- Microwave for a further 30 seconds and stir really well, combining all the ingredients
- If lumps of chocolate remain microwave for 10-20 second bursts until no lumps remain and all the ingredients are fully combined, silky and smooth.
- Pour in the Baileys and stir through well until well combined.
- Pour the fudge into the prepared slice tin and smooth to spread
- Chill in the refrigerator for 6 hours, or overnight
- Once set, slice into small squares and serve!
- You can store in an airtight container in the fridge for several days, this can also be frozen as per my notes.

Notes
Why milk chocolate and dark chocolate?
This way it sets much better than using milk chocolate alone, but is not as rich as all dark. All dark is lovely but it does take over the flavour of the Baileys a little.
WHAT TO DO IF MY CHOCOLATE SEIZES?
This can happen so easily if chocolate is overheated. The chocolate becomes thick and grainy in texture and looks quite odd compared to the silky smooth chocolate you normally expect.
It can be saved, all you need to do is to add 1 teaspoon of boiling hot water to the chocolate and whip it well to combine, if after 30 seconds of whipping it is still grainy, add a further teaspoon and beat again until silky smooth.
