I love a recipe that packs a punch with all the flavours you hope it will have! This Lemon Coconut Slice is divine, like the only lemon brownie recipe you will ever need!
Nothing worse than a lemon slice with barely any lemon or a coconut slice with only a hint of coconut. But this recipe totally does what it says it will and more! The texture is gorgeous with a lovely moist brownie like consistency. It is also made all in one pot so fewer dishes which is always a bonus!
I have been asked to provide a plate of food for a morning music group once a week so need to get my thinking cap on for some different and tasty recipes to provide each week.
I have decided the inspiration will come from what I have in the cupboard on any given day, this week lemon and coconut was on hand and I came across so many lovely variations of this slice but this was the easiest and nicest with the fewest steps involved – which was important as I was making it all while getting the kids ready for school this morning!

Making it all in one pot was great – just melting the butter over the heat and then adding all your ingredients as per the instructions below, pour into the tin and you are ready to bake! I doubled the recipe today and made two slices and it worked well.

Lemon Coconut Slice
Ingredients
- 250 grams butter
- 430 grams (2 cups) caster sugar
- 4 Eggs
- 225 grams (1 1/2 cups) plain white flour
- 90 grams (1 cup) desiccated coconut
- 1 tablespoon finely grated lemon rind
- 60ml (1/4 cup) fresh lemon juice
- Icing sugar, to dust
Instructions
- Preheat oven to 180º C ( 350º F).
- Line a 20 x 30cm brownie or slice pan with a small spray of cooking spray and baking paper (I used our roasting dish).
- Melt the butter in a saucepan over medium heat.
- Remove from heat and stir in castor sugar, mix well.
- Add eggs one at a time, mixing well and stir until mixture is thick and glossy.
- Sift the flour over the egg mixture and stir until well combined (lets be honest I almost never sift anything!)
- Stir in coconut, lemon rind and lemon juice.
- Pour mixture into prepared pan.
- Bake for 30 – 40 minutes or until a skewer inserted into the centre comes out clean and it bounces back slightly to a gentle touch.
- Set aside in the pan to cool completely.
- Cut into pieces and dust with icing sugar to serve.
- Store in airtight container for 3 days.

Hi. Iโm not familiar with baking with gluten free flour sorry, hopefully you can research to find the right ratios, or choose a gluten free recipe. This recipe relies on the whisking of the eggs for rising like a brownie so doesnโt typically use any baking powder.

Hi there followed the recipe irs baking now, so far looks good and smells amazing! I placed the oven at 180 but we have fan forced oven so didnโt realise I needed to turn it down until 10 mins later looked a little burnt. Could you please add conventional for any future readers who like silly me assumed fan force. Hi, Iโm so sorry to hear that! The initial method of mixing of the sugar and eggs is what causes this one to rise rather than traditional raising agents. It is like a brownie texture rather than a cake however, but shouldnโt be dense as such. Did it still taste ok?

You can freeze it once baked but I wouldnโt freeze it uncooked. It will lose all the air youโve incorporated for rising etc.

I followed this recipe as stated but this slice did not turn out well at all. It was very flat and dense. I looked at the recipe and there is no raising agent in it at all? Most of the comments seem to praise this recipe without having actually made it first, so the high star rating is misleading. Would not it make again, I’m afraid.

Iโm sorry the recipe didnโt turn out as youโd hoped. Itโs one I make very frequently as have several thousands of others. There is no need for a raising agent as the addition of the eggs and the beating of each addition ensures it rises. Without being there with you itโs hard to know what went wrong for you. Hi. I made this recipe last night. I just finished work and decided to have some with a coffee. It is soooooo yum. I absolutely love coconut and lemon so the combination was heavenly. I would recommend this recipe be tried. My 3yr old grandson also went back for more.

Ideally you want to use standard conventional bake not fan forced for baking. If you only have a fan oven then youโll need to set the temperature at least 20C below and watch it.

Yes you can reduce the sugar in many recipes. Sometimes it effects the outcome, flavour, rising or colour. But you can definitely try many do.

Depends on a few factors, the size of the dish used and how well mixed in the first few steps were. But it doesnโt rise a huge amount no. โบ๏ธ

Ha, crack up……just to let you know that if you don’t follow the recipe exactly ie cream the butter and sugar instead of melting it, it still works!! I was looking a a number of recipes at once and got confused so after 15 mins hand beating creaming I decided I couldn’t bear to melt it after all my hard work so kept going! I was a little concerned about rising so added 1 tsp baking powder. Turned out beautifully! Will do again but try reading the steps next time ?

Caster sugar is a finer white sugar. You can however easily use normal white sugar in its place in most recipes. You can in some instances notice that the texture is slightly grainier but in this recipe I would imagine you would hardly notice. ๐
